Pumpkin Spice Buttercream Recipe: Perfect for Fall Treats!

As the crisp autumn breeze rolls in, nothing feels more comforting than the cozy flavors of fall. Here’s how to make it:


Pumpkin Spice Buttercream Recipe

Ingredients:

 • 6 ounces (170g) Sweet Shoppe Pumpkin Spice Flavored Melting Wafers

 • 1 cup (16 Tbsp; 226g) unsalted butter, softened to room temperature

 • 2 cups (240g) confectioners sugar

 • 1 teaspoon pure vanilla extract

 • 1/8 teaspoon salt

Instructions:

  1. Melt the Wafers: In a microwave-safe bowl, melt the Sweet Shoppe Pumpkin Spice Melting Wafers. Heat in 30-second increments, stirring after each session. Once nearly melted, reduce the time to 20-second intervals until completely smooth. Let the melted wafers cool to room temperature.
  2. Cream the Butter: In a medium bowl, using a handheld or stand mixer fitted with a paddle attachment, beat the softened butter on medium speed for about 1 minute until creamy.
  3. Combine Ingredients: Switch the mixer to low speed & gradually add the confectioners’ sugar. Mix until fully combined. Stir the cooled Pumpkin Spice Melting Wafers until smooth, then add them to the butter & sugar mixture. Beat on medium speed for 2 minutes until well combined.
  4. Add Final Touches: Add the vanilla extract & salt, & beat for an additional minute. Taste the frosting. If it’s too thick, add 1 more tablespoon of heavy cream or milk. Adjust salt to taste if needed.
  5. This recipe will make enough frosting to cover 12 cupcakes, a 2-layer 8-inch cake, or a thin layer on a 9x13-inch quarter sheet cake. For a 2-layer cake, you can increase the recipe by 1.5 times.

4th of July Cupcakes with Easy DIY Toppers!

Fourth of July is right around the corner & what better way to celebrate than with festive, delicious cupcakes? 

Whether you're hosting a backyard barbecue or just enjoying a quiet family gathering, our Sweet Shoppe Melting Wafers in Cardinal Red, Sky Blue, & Ultra White can help you create stunning & patriotic cupcake toppers with minimal effort. 

Here’s how you can create these easy DIY cupcake toppers that are sure to impress!

What You’ll Need:


Instructions:

  1. Prepare Your Cupcakes: Start by either baking your favorite cupcake recipe or grabbing some ready-made cupcakes from the store. Set them aside while you prepare your toppers.
  2. Prep Your Melting Wafers: Place your Sweet Shoppe Melting Wafers in microwave-safe bowls, one color per bowl. Microwave them in 30-second intervals, stirring each time, until the wafers are completely melted & smooth. Check out our youtube channel for more precise instructions on how to melt our Sweet Shoppe!
  3. Shape the Toppers: Line a baking sheet or plate with parchment paper. Place your star-shaped outline underneath the parchment paper (or the outline of your choice) on top. Pour our melted wafers into a piping bag & carefully trace the design.
  4. Set the Toppers: Allow the melted wafers to cool & harden. To speed up the process, place your baking sheet or plate in the freezer for 2-5 minutes. This will help the toppers set quickly & make it easier to peel off the parchment paper.
  5. Peel Off the Toppers: Once the wafers have set, gently peel the toppers off the parchment paper. Be careful not to break the delicate edges.
  6. Decorate Your Cupcakes: Place your newly created star-shaped chocolate cupcake toppers on top of your frosting. Our vibrant cardinal red, sky blue, & ultra white colors will make your cupcakes stand out & perfectly capture the patriotic spirit of the 4th of July.

PRO TIPS:

  • Use a metal spatula to help release your designs without breaking them. You can use the edge of the table by pulling the parchment paper down on the edge to help easily peel your designs off.
  • You can also use cookie cutters to create uniquely shaped cupcake toppers! Simply pour your melted wafers into your cookie cutters & follow the same steps.
  • If you’re having trouble getting the chocolate to release from the cookie cutter, you can lightly spray the inside of the cookie cutter with non-stick spray before pouring in the melted wafers.
  • Mix & match colors to create a variety of designs or try swirling two colors together for a marbled effect!

RECIPE: Chocolate Cupcakes with Salted Caramel Ganache

 

Indulge in the ultimate chocolate & caramel lover's dream with this decadent Chocolate Cupcake recipe topped with a luscious Salted Caramel Ganache! We’ll be making the ganache from scratch using our our *NEW* Sweet Shoppe Salted Caramel Melting Wafers!

Moist chocolate cake topped with a decadent salted caramel ganache to create a dessert that's sure to impress! 

Let's dive into the recipe & create this chocolate masterpiece!

Ingredients:

For the Chocolate Cupcakes:

For the Salted Caramel Ganache:

Instructions:

For the Chocolate Cupcakes:

  1. Preheat your oven to 350°F (175°C). Prepare a cupcake pan with liners.
  2. In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, & salt.
  3. Add the eggs, milk, vegetable oil, & vanilla extract to the dry ingredients. Mix until well combined.
  4. Gradually add the hot water to the batter, stirring until smooth. The batter will be thin, but that's okay.
  5. Divide the batter evenly between the prepared cupcake liners, filling them halfway.
  6. Bake in the preheated oven for18-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Remove the pans from the oven & let the cupcakes cool completely.

For the Salted Caramel Ganache:

  1. In a heatproof bowl, combine the Sweet Shoppe Salted Caramel Melting Wafers & heavy cream.
  2. Microwave the mixture in 30-second intervals, stirring between each interval, until the wafers are completely melted & the ganache is smooth. About 2 or 3 total intervals.
  3. Let the ganache cool for a few minutes to thicken slightly.
  4. Take ½ of the ganache & transfer it to a glass bowl & refrigerate for 10 minutes to make a thicker consistency for the filling. 

Decorate:

  1. Once the cupcakes have cooled, it's time to decorate them!
  2. Grab your thicker caramel ganache & using a piping bag, top each cupake with firm caramel ganache as if it were frosting.
  3. With your thinner ganache, pour it in a squeeze bottle or use a spoon, create drops or drizzle on the top edge of your piped cupcakes.
  4. If desired, sprinkle sea salt flakes or our eleven o’one Salted Caramel Flakes over the caramel ganache for an extra burst of flavor.
  5. Unwrap your Salted Caramel Chocolate Cupcakes, & enjoy every rich & decadent bite!

Sweet Team Spotlight: Amy Mucha!

We personally invited some of our loyalist supporters & biggest superfans to create this power team of talented bakers & treat makers!



Meet Amy Mucha, the owner & Chief Pop Artist of Daisy Pops, located in Kent, Ohio. Amy's journey into the world of cake popping is as delightful as the treats she creates. 



It began in 2011, when Amy’s mother-in-law gifted her a cakepop recipe book, unknowingly setting the stage for an incredible career ahead! What started as a hobby soon blossomed into passion as Amy delighted friends & family with her whimsical cakepop creations. 


In 2016, overwhelmed by the appreciation for her cakepops, Amy decided to share her cakepops beyond friends & family & that’s when Daisy Pops was born! 


At the beginning, Amy juggled her roles as a highschool math teacher & devoted parent, while Daisy Pops began to gain momentum. When the pandemic hit in 2020, she decided to reevaluate her priorities & put her passion first! Amy left her teaching career in May of 2021, to fully embrace a career of cake popping with zero regrets! 


In April of 2023, Amy opened her first storefront & launched her “popfleet” of cakepop trucks & carts for events! But she didn’t stop there! With high demand for her treats, Amy needed to come up with a more efficient way to crank out cakepops for her customers. That’s when she decided to evolve the traditional cakepop shape into her iconic disc shape! 


Amy & her husband have expanded upon this idea with their new venture, Pop Innovations. Pop Innovations focuses on enhancing the cake-popping experience through innovative tools & accessories using 3D printing technology.

RECIPE: Chocolate & Caramel Dipped Apples with Salted Caramel Flakes

If you’re looking to create a simple, yet sensational fall treat using our NEW Salted Caramel Flakes, this Chocolate & Caramel Dipped Apples Recipe might be just what you’re looking for! 


Imagine crisp & sweet apples paired with sweetness from Peter’s Caramel & Eleven o’one European Deluxe Milk Compound Coating, topped with salty-sweet caramel flakes, making an irresistible combination!


Ok, enough talk, let’s make these delicious chocolate & caramel apples! 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 


Tools:

  • Large Pot
  • Double boiler or microwave safe bowl
  • Confectionary sticks (caramel apple sticks, popsicle sticks)
  • Wax paper
  • Silicone Spatulas

Ingredients:

Instructions: 

Prepare your Workspace: 
Line a baking sheet with wax paper to prevent the apples from sticking to the baking sheet & make cleanup a breeze.


Prepare the Apples: 

Bring a large pot of water to a boil. In the meantime, remove the stems from the apples.
Carefully dip apples into the boiling water with a slotted spoon for 30 seconds. This will allow the wax on the apples to melt away.
Dry apples with a paper towel & let them cool for at least 30 minutes. Insert a stick into each apple & set in the refrigerator while you prepare the other ingredients. 


Melt the Peter’s Caramel Loaf:

Check out this previous blog post on different ways to melt Peter’s Caramel Loaf. 

 

We recommend this double boiler method:

Prepare a heavy-bottomed saucepan or a double boiler. Ensure the boiling water does not touch the pan or bowl that will hold your caramel as no water should come in contact with your caramel.
Slice the desired amount of Peter’s Caramel Loaf & put it in the bowl going over the double boiler. 
Melt the Peter’s Caramel on low to medium heat, stirring constantly. 
PRO TIP: use a rubber spatula instead of a whisk to minimize air bubbles.
The temperature of your caramel should remain between 160ºF- 180ºF while melting.
Once you’ve reached the desired consistency, remove your Peter’s Caramel from the heat to avoid overcooking or burning.


Melt your Milk Chocolate

As we mentioned, we recommend our Eleven o’one European Deluxe line for this recipe: 

1. Fill a microwave safe bowl with Eleven o’one Milk Deluxe & melt for 30 seconds. 
2. Take out the container & gently shake the small wafers to disperse any hot spots. 
3. Return to microwave & heat for another 30 seconds. Remove & stir. 
4. Repeat this process one or two times more, reducing the time by 10 seconds with each intervol. 
5. When your wafers are about 75% melted, stop the heating process & stir with a silicone spatula. The warm melted wafers will aid in melting the rest of the coating wafers in the dish.
PRO TIP: Ensure your compound coatings do not exceed 90ºF. 

Dip the Apples: 
1. Use the confectionary stick to firmly hold your apple, then gently dip it into the melted caramel, twisting the apple until it is fully covered. 
2. Hold the apple over the pot to allow excess caramel to drip off then wipe the bottom of the apple on the edge of the bowl to create a clean bottom for your treat. 
3. Set your caramel dipped apple on the wax paper lined baking sheet for a few minutes to allow it to set. 
4. Once the caramel has set & cooled on the apples, proceed to dip in your melted chocolate to create a rich top layer.  
5. Before your chocolate layer fully sets, freely sprinkle your Salted Caramel Flakes on top for the perfect finish. The Flakes will adhere beautifully, adding a slight crunch & delightful flavor.

PRO TIPS:

Ensure your apples are fully dry before dipping in Peter’s Caramel Loaf
Ensure your Eleven o’one Milk European Coatings, or compound coatings of your choice are not too hot. Your melted chocolate should not be above 90ºF. 
Ensure your caramel coated apples have set well before dipping in chocolate.
If your compound coating layer has set before you are able to sprinkle the Caramel Flakes on, you can carefully use a culinary blow torch or heat gun to remet the chocolate. 
Your dipped apples will last for 1 week if properly stored & refrigerated. 
So grab your caramel & chocolate & make a detour for the orchid because these apples are sure to be a hit at your next Fall gathering! Happy Harvest!
