Prepare for Chocolate Price Increases & Shortages!

Attention chocolate makers: It's time to start paying attention to the significant developments in the cacao market! In recent months, the price of cacao has been steadily increasing, presenting challenges impacting the chocolate, confectionary & bakery industries. This cocoa price surge is driven by a combination of disruptions in the supply chain, the adverse effects of climate change on cocoa-producing regions & an influx in demand for chocolate products. As a result, chocolate manufacturers worldwide are facing heightened production costs.

As shown in the chart below, most cocoa beans are grown in West Africa, with about ⅔ of cacao originating from areas along the Ivory Coast & Ghana. Cacao farmers in these regions have faced extreme weather & a change in climate patterns, resulting in devastating crop harvests. 

As the impact of this surge starts to trickle down to the consumer level, we want you to be prepared for increased expenses. At Stover & Company, we’ve already taken proactive steps to assess our supply chains, explore alternative sourcing options, & implement strategies to mitigate the impact of rising cacao prices on our operations to best offset the impact on our customers. That said, we want to remain transparent with our customers about these inevitable changes. 

While the future of the chocolate industry may seem daunting, we recommend you take these steps to stay ahead of these challenging changes:

Stay informed & follow the stock market. This time last year, cacao prices would fluctuate once or twice a day, now prices teeter up to 12 times a day. 

 Allow your business to adapt. Chocolate prices will surge, but don’t panic! Simply raise your prices accordingly. Revisit your recipes & raise your prices according to how much chocolate is used for each treat - you may be surprised at how little the increase is on a granular level.

Purchase what you need NOW. We foresee shortages in the chocolate industry to affect our customers starting in Q4 of 2024. At this rate, the longer you wait to purchase your chocolate, the higher the price will be or worse, you may not be able to find the products you usually purchase. Don’t find yourself short on chocolate, plan ahead! 

Pivot. If possible, replace some of your chocolate ingredients for a compound coating to offset costs! At this time, the compound chocolate market has not been affected since there is no cacao in the product. Our Sweet Shoppe Melting Wafer line is here to the rescue if you find yourself looking for chocolate alternatives.

Lemon Blueberry Easter Muffins

Easter is coming early this year! Mark your calendars for this Sundary, March 31st. 

What better way to celebrate than with a batch of Lemon Blueberry Easter Cupcakes? These sweet treats are the epitome of Spring baking bursting fresh flavors!

Gather your ingredients, preheat your oven, & let's get baking!



For the Cupcakes:




  1. Preheat your oven to 350°F  & line a muffin tin with muffin liners.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, & salt. Set aside.
  3. In a large bowl, cream together the softened butter & granulated sugar until light & fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract & lemon zest.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with buttermilk. Begin & end with the dry ingredients, mixing just until combined.
  5. Fill each muffin liner about two-thirds full with the muffin batter.
  6. If using homemade filling: Spoon a small amount of the blueberry compote onto the center of each cupcake, gently pressing it into the batter. If using Henry & Henry Blueberry Redipak, skip this step.
  7. Bake the cupcakes for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. While the cupcakes cool, prepare the lemon cream cheese frosting. In a large bowl, whip the Brill Cream Cheese Icing & combine lemon juice, lemon zest, & vanilla extract. Beat mixture until creamy & well combined.
  9. If using Henry & Henry Blueberry filling: Once the cupcakes are completely cooled, cut a small hole on the top of the cupcakes and pipe or spoon a little of the Henry & henry Blueberry filling and replace the piece you cut out on top.
  10. Continue by frosting your easter cupcakes with the lemon cream cheese frosting. 

PRO TIP: You can get creative with your decorating, adding a sprinkle of lemon zest or a few fresh blueberries on top.
Want to make these complete from scratch? Make your own Blueberry Filling & Lemon Cream Cheese Frosting!

For the Blueberry Compote:

  • 1 cup fresh blueberries
  • 2 tablespoons granulated sugar
  • 1 tablespoon lemon juice

In a small saucepan, combine the blueberries, sugar, & lemon juice for the compote. Cook over medium heat until the blueberries burst & the mixture thickens slightly. Remove from heat & let cool.

For the Lemon Cream Cheese Frosting:

  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon vanilla extract

In a large bowl, whip together the softened cream cheese & butter until smooth. Add the powdered sugar, lemon juice, lemon zest, & vanilla extract. Beat until creamy & well combined.

The combination of zesty lemon, sweet blueberries, & creamy frosting creates a heavenly treat that will have everyone reaching for seconds. 

These Easter Cupcakes are sure to become a new holiday tradition in your home.

Sweet Team Spotlight: Amy Mucha!

We personally invited some of our loyalist supporters & biggest superfans to create this power team of talented bakers & treat makers!

Meet Amy Mucha, the owner & Chief Pop Artist of Daisy Pops, located in Kent, Ohio. Amy's journey into the world of cake popping is as delightful as the treats she creates. 

It began in 2011, when Amy’s mother-in-law gifted her a cakepop recipe book, unknowingly setting the stage for an incredible career ahead! What started as a hobby soon blossomed into passion as Amy delighted friends & family with her whimsical cakepop creations. 

In 2016, overwhelmed by the appreciation for her cakepops, Amy decided to share her cakepops beyond friends & family & that’s when Daisy Pops was born! 

At the beginning, Amy juggled her roles as a highschool math teacher & devoted parent, while Daisy Pops began to gain momentum. When the pandemic hit in 2020, she decided to reevaluate her priorities & put her passion first! Amy left her teaching career in May of 2021, to fully embrace a career of cake popping with zero regrets! 

In April of 2023, Amy opened her first storefront & launched her “popfleet” of cakepop trucks & carts for events! But she didn’t stop there! With high demand for her treats, Amy needed to come up with a more efficient way to crank out cakepops for her customers. That’s when she decided to evolve the traditional cakepop shape into her iconic disc shape! 

Amy & her husband have expanded upon this idea with their new venture, Pop Innovations. Pop Innovations focuses on enhancing the cake-popping experience through innovative tools & accessories using 3D printing technology.

Shamrock Pretzel Tutorial

St. Patrick's Day is just around the corner, & what better way to celebrate the delightful holiday than with an easy-to-make holiday treat? Say hello to our Shamrock Pretzel Sticks, a charming combination of crunchy pretzels & sweet melting wafers that not only captures the essence of the holiday but these treats also make for a visually stunning addition to your St. Patrick's Day festivities!

Follow along with Alicia in this video with this easy to follow St. Patrick's Day recipe!




  1. Create the Shamrock Shape:
    Begin by grabbing three pretzels & arranging them in the shape of a shamrock. One on top & one on each side. Feeling lucky? Add a fourth pretzel!
  2. Melt your Sweet Shoppe Spring Green Melting Wafers:
    Follow the melting instructions provided for the Sweet Shoppe Spring Green Melting Wafers.
  3. Create your Shamrock Shape:
    Once your melting wafers are melted down to a smooth consistency, dip just the sides of one of your pretzels & attach it to the other two pretzels to form a shamrock shape. Add a bit of melting wafers to the edges for extra support. Dip a cake pop stick into the melted wafers & lay it flat on top of the pretzels. Allow it to dry, securing the shamrock onto the stick.
  4. Coat with Melting Wafers:
    Once dry, dip the shamrock pretzel into your melted Sweet Shoppe Spring Green Melting Wafers, tapping off any excess. Lay it flat on parchment paper or place in a cakepop stand to dry.
  5. Create a Marble Effect:
    Melt your Sweet Shoppe Forest Green Melting Wafers & add melting coating to a piping bag. Drizzle the Sweet Shoppe Forest Green over your melted Sweet Shoppe Spring Green. Dip your shamrock pretzel into the coating ensuring a smooth, consistent coating. Gently rotate the cakepop stick from side to side as you remove your treat to create a beautiful marble finish.
  6. Let Them Shine:
    Allow your Shamrock Pretzel Sticks to dry completely. Once set, they are ready to steal the show at your St. Patrick's Day celebration.
