Recipe: Red Velvet Bundt Cake with Cream Cheese Glaze

Few desserts are as iconic as red velvet cake! With its signature deep red hue & soft, velvety crumb, this cake is a showstopper for any occasion! Thanks to Brittany at Sugar Cove Sweets, we’ve combined forces to put a spin on this classic cake!

 

Introducing the red velvet bundt cake topped with a sweet cream cheese glaze! We’ve paired Brittany’s classic Red Velvet Cake Recipe with our  Sweet Shoppe Cream Cheese Flavored Melting Wafers to create this delicious masterpiece perfect for any occasion!


This recipe takes a classic boxed red velvet cake mix & elevates it to new heights with added ingredients! So grab your bundt cake pan, your whisk, & your Sweet Shoppe Cream Cheese Melting Wafers & let's get started! 

 

Red Velvet Cake

  • 1 Box Red Velvet Cake Mix

  • 1 Cup Granulated Sugar 7 oz

  • 1 Cup All-Purpose Flour 5 oz

  • 1/2 Tsp Salt

  • 1 Tbsp Cocoa Powder

  • 3 Eggs Room Temperature

  • 1 Stick Unsalted Butter (melted) 113 grams

  • 1 Cup Sour Cream 8 oz

  • 1/4 Cup Vegetable Oil 2 oz

  • 1 Cup Milk 8 oz

  • 1 Tbsp Vanilla Extract


Instructions

  1. Preheat the oven to 345°F. Prepare bundt cake pan with baking spray or a homemade pan release. 

  2. In a microwave-safe bowl, microwave butter in 15-30 second intervals until completely melted. Set aside until ready to incorporate into your recipe.

  3. Measure sour cream & milk into a small, microwave-safe bowl. If not already at room temperature, microwave for 30 seconds to bring to room temperature then set aside.

  4. Crack room temperature eggs into a separate bowl & set aside. 

  5. Add flour, sugar, red velvet cake mix, cocoa powder, & salt to a large mixing bowl. Use a whisk or spoon to gently combine the ingredients until they are evenly distributed.

  6. Combine all ingredients into the bowl containing the dry ingredients. Don't forget to add the vegetable oil & vanilla extract!

  7. Mix ingredients together with an electric hand mixer, starting on low & increasing speed to med-high. Scraping bowl periodically to make sure all ingredients are incorporating & not stuck on the bottom. Mix until batter is smooth & fluffy, about 1-2 minutes!

  8. Pour batter into the prepared bundt cake pan. 

  9. Bake for 28-34 min depending on your oven. Use a toothpick or knife & insert into the center of the cake – if it comes out clean or with a few moist crumbs, it’s good to go. You can also gently press your finger into the top of the cake, if it springs back slowly, it’s done!

  10. Let the cake cool in the pan for 10-15 minutes, then transfer to a wire cooling rack to finish cooling.

Cream Cheese Glaze Recipe

Perfect for drizzling over cakes, bundt cakes, cinnamon rolls, & even cookies!

 

Ingredients:

• 1 ¼ cup powdered sugar

• 2-3 tbsp milk or cream

• ½ cup Sweet Shoppe Cream Cheese Flavored Melting Wafers (melted)

 

Instructions:

1. Melt the Sweet Shoppe Cream Cheese Flavored Melting Wafers in the microwave in 15-30 second intervals, stirring until smooth.

2. In a bowl, whisk together powdered sugar & 2 tbsp of milk or cream until combined.

3. Stir in the melted wafers, mixing until smooth. If needed, add an extra tablespoon of milk for a thinner consistency.

4. Drizzle over your cooled red velvet cake & enjoy!

  • Keep in mind, all ovens bake differently so an oven thermometer is highly recommended.
