Light & Refreshing Lemon Pie Recipe For Memorial Day

Memorial Day is coming up & while we want to make all red, white & blue themed treats, we are holding off on those until July! However, we have the perfect light, refreshing pie recipe that will be a hit at the Memorial Day Picnics! 

Pie Ingredients

Let's gather our ingredients first. Gather & measure first, this will make the process a lot easier once you're in the baking groove. 


1 - 9in pie crust, baked 
¾ cup white sugar 
3 tablespoons cornstarch 
1 cup water 
1 teaspoon lemon zest 
¼ cup lemon juice 
1 - 3 oz package cream cheese 
2 eggs 
¼ cup white sugar

Once your ingredients have been gathered, begin the baking process! We promise, it's quick, easy & painless! Who wants to stay in the kitchen on a beautiful day?! 

Lemon Pie


1. Combine 3/4 cup sugar, cornstarch, water, lemon peel, juice & egg yolks in a saucepan. Beat well. Stir while cooking over medium heat until thick; it will thicken just as it starts to simmer.

2. Remove saucepan from heat. Add cream cheese to lemon mixture & stir until incorporated.

3. In a small bowl, beat egg whites until stiff; add remaining 1/4 cup sugar. Fold sweetened egg whites into lemon mixture.

4. Pour filling into shell and chill. 

That's it! Quick & easy delcious treat in less than 2 hours! This pie serves about 8 people with approximately 246 calories per slice.
