SWEET DOUGH DINNER ROLLS BREAD FLOUR 12 LBS 8 OZ 13 LBS 8 OZ SWEET DOUGH BASE 5 LB 3 LB COMPRESSED YEAST 1 LB 1 LB WARM WATER 8 LB 8 LB TOTAL 28.5 LB 25.5 LB MIXING INSTRUCTIONS: 1. PLACE WARM WATER AND YEAST IN MIXING BOWL AND DISSOLVE. 2. ADD SWEET DOUGH BASE AND BREAD FLOUR. MIX ON LOW SPEED TO INCORPORATE, THEN MIX ON MEDIUM SPEED 10 - 14 MINUTES OR UNTIL DOUGH IS FULLY DEVELOPED. 3. DOUGH TEMPERATURE 80 - 82 F. 4. PUNCH DOWN DOUGH AND MAKE UP AS DESIRED PRODUCT (IE SWEET ROLLS, COFFEE CAKE, DINNER ROLLS). 5. FERMENTATION TIME: 45 - 60 MINUTES. 6. PROOF TO DESIRED SIZE AND BAKE AT 400 - 425 F. FOR BEST RESULTS SWEET DOUGH BASE SHOULD BE USED AT TEMPERATURES BETWEEN 70 - 80 F.
