We’re so excited to introduce another new addition to our Stover’s Sweet Team family — Nida Haque, known online as JustChocol8 by Nida! Based in Atlanta, GA, Nida brings a heart full of passion, a soul full of sweetness, & hands that craft the most divine chocolate creations. From viral cocoa bombs to stunning knafeh bars (also known as Dubai Bars), she’s got the magic touch & we’re so honored to have her as part of our team!

Her Sweet Journey
Baking began as a form of relaxation for Nida as a comforting escape during her intense days as a medical school student. When the world slowed down in 2020 due to the pandemic, she dipped her toes (& soon her whole self) into chocolate-making, starting with hot cocoa bombs. 

The response? Overwhelming love from friends & family & the beginning of a beautiful chocolate journey!

Since then, Nida’s treats have only grown more creative & delicious! Her sweet offerings now include staples like chocolate covered strawberries, Oreos, pretzels, cookiestix, cake pops, dates & now her signature Dubai Chocolate Bars!

What inspired Nida to turn her passion into a sweets business?
Social media mentors & fellow treat makers lit the spark & she’s now proudly part of that very same community of treat makers. Through her Instagram page, Nida showcases her gorgeous creations while sharing the love & knowledge she’s gathered along her journey.

These stuffed Medjool dates are toasted almonds & shredded coconut before they are dipped into our melted Eleven o’One Milk Deluxe Wafers (cooled to 92–94°F). To finish them off, Nida tops the dates with a roasted almond & coconut sprinkle. *Chef Kiss!*

  

Nida’s top advice for beginners?
“Persevere. Chocolate work takes time, patience, & lots of practice. Don’t get discouraged!”

One final tip from Nida: She cools her cake pops & dates just slightly before dipping for a faster set time & smoother finish. Oh & no piping bags here! Nida swears by fine tipped drizzle bottles for her intricate chocolate designs!

How to Make Candy Clay with Sweet Shoppe Melting Wafers

Candy clay is a versatile, fun, & delicious alternative to fondant. Most people know it as modeling chocolate, but since we are using melting wafers instead of couverture chocolate, we’re calling this candy clay! 


Whether you’re decorating cakes, molding figures, or creating edible sculptures, candy clay gives you the flexibility & smooth texture you need. The best part? It’s easy to make using just two ingredients: Sweet Shoppe Melting Wafers & light corn syrup! Check out our recipe video here & follow the simple guide below to whip up your own batch of candy clay.


Ingredients

 • 16 oz Sweet Shoppe Melting Wafers (available in various colors & flavors!)

 • 3.5 oz light corn syrup


Instructions


1. Melt your Sweet Shoppe Melting Wafers

Begin by melting your Sweet Shoppe Melting Wafers in the microwave in 20-30 second intervals, stirring between each round to ensure the chocolate melts smoothly without burning.


2. Warm your Corn Syrup

Next, gently warm your light corn syrup in the microwave for about 15-30 seconds. Make sure not to overheat it! If you want to color your candy clay, now is the time to add liquid coloring. You can either:

 • Add oil based color to the melted wafers.

 • Mix liquid gels into the warm corn syrup before combining.


Pro Tip: If you’re using white melting wafers, feel free to add liquid colors directly to the syrup as it doesn’t need to be oil-based.


3. Combine the Ingredients

Pour the warmed corn syrup into your Sweet Shoppe melted wafers. Use a silicone spatula to fold the mixture together. Be gentle during this step; you want to mix until it resembles soft-serve ice cream but avoid overmixing. If you overwork it, the oil may begin to separate from the mixture.


4. Let it rest

Once mixed, pour the candy clay onto a sheet of plastic wrap. Cover it tightly & let it rest at room temperature until it firms up but remains pliable. Depending on the room temperature, this can take up to a few hours.


5. Knead Until Smooth

When the clay is firm but workable, knead it with your hands until it becomes smooth & pliable. If you overwork it & feel the oil separating, let it rest & cool before kneading again. Rewrap the finished candy clay in plastic wrap & let it harden completely before using it. 


6. Store Properly

To store your candy clay, wrap it in plastic wrap & then place it in a ziplock bag. Check the expiration dates of both your melting wafers & corn syrup, & use the closest date as your storage guideline.


Pro Tips:

 • Avoid Overmixing: If you overmix the melted wafers & corn syrup, the oil in the mixture may separate. Stir gently to maintain the right consistency.

 • Reheating: After the candy clay has set completely, it will be stiff. You can warm it for 5 seconds at a time in the microwave to help soften it up for use.

Candy clay is a fantastic alternative to fondant for cake decorating. 

You can:

 • Roll & cut shapes for cupcakes & cakes.

 • Mold & sculpt figures & flowers for detailed cake toppers.

 • Use it as a covering for cakes or cookies just like fondant.

4th of July Cupcakes with Easy DIY Toppers!

Fourth of July is right around the corner & what better way to celebrate than with festive, delicious cupcakes? 

Whether you're hosting a backyard barbecue or just enjoying a quiet family gathering, our Sweet Shoppe Melting Wafers in Cardinal Red, Sky Blue, & Ultra White can help you create stunning & patriotic cupcake toppers with minimal effort. 

Here’s how you can create these easy DIY cupcake toppers that are sure to impress!

What You’ll Need:


Instructions:

  1. Prepare Your Cupcakes: Start by either baking your favorite cupcake recipe or grabbing some ready-made cupcakes from the store. Set them aside while you prepare your toppers.
  2. Prep Your Melting Wafers: Place your Sweet Shoppe Melting Wafers in microwave-safe bowls, one color per bowl. Microwave them in 30-second intervals, stirring each time, until the wafers are completely melted & smooth. Check out our youtube channel for more precise instructions on how to melt our Sweet Shoppe!
  3. Shape the Toppers: Line a baking sheet or plate with parchment paper. Place your star-shaped outline underneath the parchment paper (or the outline of your choice) on top. Pour our melted wafers into a piping bag & carefully trace the design.
  4. Set the Toppers: Allow the melted wafers to cool & harden. To speed up the process, place your baking sheet or plate in the freezer for 2-5 minutes. This will help the toppers set quickly & make it easier to peel off the parchment paper.
  5. Peel Off the Toppers: Once the wafers have set, gently peel the toppers off the parchment paper. Be careful not to break the delicate edges.
  6. Decorate Your Cupcakes: Place your newly created star-shaped chocolate cupcake toppers on top of your frosting. Our vibrant cardinal red, sky blue, & ultra white colors will make your cupcakes stand out & perfectly capture the patriotic spirit of the 4th of July.

PRO TIPS:

  • Use a metal spatula to help release your designs without breaking them. You can use the edge of the table by pulling the parchment paper down on the edge to help easily peel your designs off.
  • You can also use cookie cutters to create uniquely shaped cupcake toppers! Simply pour your melted wafers into your cookie cutters & follow the same steps.
  • If you’re having trouble getting the chocolate to release from the cookie cutter, you can lightly spray the inside of the cookie cutter with non-stick spray before pouring in the melted wafers.
  • Mix & match colors to create a variety of designs or try swirling two colors together for a marbled effect!
